Stuph™ Honey Emulsion Recipe

Creating a Stable Honey Emulsion with Stuph™ for Versatile Applications

Honey is an excellent natural sweetener, but its high viscosity and water content can make it challenging to integrate into low-water (food) or high-water (drink) formulations. By using Stuph™, we can create a stable honey emulsion that allows for smooth dispersion in both high and low water applications.


1. Choosing the Right Stuph™ Type

For drinks (high-water applications) → Use Drink Stuph™, which is optimized for solubility and dispersion in water-based solutions.

For food (low-water applications) → Use Food Stuph™, designed for stable emulsions and structured formulations.

For versatility in both → Use a combination of Drink Stuph™ and Food Stuph™ to create an adaptable honey emulsion.


2. Stuph™ Honey Emulsion Recipe

Ingredients:

  • ½ cup honey (raw or pasteurized)
  • 1 tbsp Drink Stuph™ (for water-based applications like beverages)
  • 1 tbsp Food Stuph™ (for low-water applications like spreads, candies, or coatings)
  • ¼ cup neutral oil (e.g., sunflower oil, MCT oil, or light olive oil)
  • ¼ cup warm water (if making a more fluid emulsion for drinks)
  • ¼ tsp lecithin powder (optional, for extra emulsification stability)
  • 1 tsp citric acid or lemon juice (optional, for acidity balance and preservation)

3. Instructions:

For a Fluid Drink-Ready Honey Emulsion:

  1. In a blender or mixing bowl, combine honey, Drink Stuph™, and warm water.
  2. Slowly drizzle in neutral oil while blending on low to create a smooth emulsion.
  3. Add lecithin powder (if using) to enhance emulsification stability.
  4. Blend on medium speed for 1-2 minutes until fully incorporated.
  5. Store in an airtight container in the refrigerator. Shake before use.
  6. Use in energy drinks, sodas, or flavored water!

For a Thick Food-Grade Honey Emulsion:

  1. In a mixing bowl, combine honey and Food Stuph™ until smooth.
  2. Slowly mix in neutral oil while whisking or blending.
  3. Add a small amount of Drink Stuph™ if you want a hybrid emulsion that works in both food and drink applications.
  4. For enhanced stability, mix in lecithin powder and citric acid.
  5. Blend or whisk until creamy and homogeneous.
  6. Store in an airtight jar at room temperature or in the fridge for extended shelf life.
  7. Use as a spread, in baking, or as a sweetener in low-water applications!
